{"id":10684,"date":"2025-06-08T16:29:57","date_gmt":"2025-06-08T14:29:57","guid":{"rendered":"https:\/\/projectes.xtec.cat\/camps\/?p=10684"},"modified":"2025-06-08T16:32:33","modified_gmt":"2025-06-08T14:32:33","slug":"transformacio-daliments-lactis","status":"publish","type":"post","link":"https:\/\/projectes.xtec.cat\/camps\/general\/transformacio-daliments-lactis\/","title":{"rendered":"Transformaci\u00f3 d\u2019Aliments Lactis"},"content":{"rendered":"\n<p>Una de les novetats m\u00e9s ressenyables d&#8217;aquest curs al Camp d\u2019Aprenentatge de Juneda ha estat la creaci\u00f3 i consolidaci\u00f3 d&#8217;una variant de l\u2019activitat de\u00a0<a href=\"https:\/\/serveiseducatius.xtec.cat\/cda-juneda\/estades\/transaliments\/\" target=\"_blank\" rel=\"noreferrer noopener\">Transformaci\u00f3 d\u2019Aliments<\/a>. Com molts ja coneixeu, aquesta proposta parteix de l\u2019aprofitament de les mat\u00e8ries primeres d\u2019origen animal per a l\u2019elaboraci\u00f3 d\u2019aliments, i inclou dos grans \u00e0mbits: la transformaci\u00f3 c\u00e0rnia i la l\u00e0ctia. Responent a la demanda de diversos centres que, per motius varis, ho han sol\u00b7licitat, hem centrat la nostra acci\u00f3 en el treball dels lactis, substituint la transformaci\u00f3 c\u00e0rnia per un element nou: viure el proc\u00e9s d\u2019<strong>elaboraci\u00f3 del iogurt<\/strong>. Un cop fet el iogurt, l&#8217;activitat segueix l\u2019estructura habitual i procedim a con\u00e8ixer els processos de  desnatat de la llet i l&#8217;elaboraci\u00f3 de la mantega, completant aix\u00ed un extens treball sobre els productes lactis, des de la mat\u00e8ria prima fins a l&#8217;obtenci\u00f3 de productes derivats.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full is-resized\" style=\"margin-top:0;margin-bottom:0\"><a href=\"https:\/\/projectes.xtec.cat\/camps\/wp-content\/uploads\/usu2431\/2025\/06\/tf-lactis.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"576\" src=\"https:\/\/projectes.xtec.cat\/camps\/wp-content\/uploads\/usu2431\/2025\/06\/tf-lactis.jpg\" alt=\"\" class=\"wp-image-10686\" style=\"width:620px;height:auto\" srcset=\"https:\/\/projectes.xtec.cat\/camps\/wp-content\/uploads\/usu2431\/2025\/06\/tf-lactis.jpg 768w, https:\/\/projectes.xtec.cat\/camps\/wp-content\/uploads\/usu2431\/2025\/06\/tf-lactis-300x225.jpg 300w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/a><figcaption class=\"wp-element-caption\">Capsa d&#8217;aprenentatge &#8220;Fem iogurt!&#8221;<\/figcaption><\/figure>\n\n\n\n<p>A trav\u00e9s de la metodologia de les capses d\u2019aprenentatge\u00a0<em>\u201cFem iogurt!\u201d<\/em>, l\u2019alumnat converteix l\u2019espai de transformaci\u00f3 d\u2019aliments en una aut\u00e8ntica iogurteria. Organitzant-se en petits grups, segueixen les passes necess\u00e0ries per produir iogurt des de zero. Aquesta experi\u00e8ncia, m\u00e9s enll\u00e0 de treballar la cooperaci\u00f3 i l\u2019autogesti\u00f3 entre iguals, permet aprofundir en conceptes lligats al proc\u00e9s d\u2019elaboraci\u00f3, com la <strong>fermentaci\u00f3 l\u00e0ctica<\/strong>. Aprenem que per fer iogurt, cal\u00a0<strong>pasteuritzar<\/strong>\u00a0la llet per eliminar microorganismes pat\u00f2gens i assegurar-ne la qualitat i la seguretat per al consum. Aprenem un proc\u00e9s en qu\u00e8 els bacteris\u00a0<em>Lactobacillus bulgaricus<\/em>\u00a0i\u00a0<em>Streptococcus thermophilus<\/em>\u00a0transformen els sucres de la llet en \u00e0cid l\u00e0ctic. Al llarg de tot aquest proc\u00e9s, l\u2019alumnat t\u00e9 la responsabilitat de controlar la temperatura del producte i garantir un espai d\u2019elaboraci\u00f3 net i segur per assegurar un producte de qualitat.<\/p>\n\n\n\n<p>Per tancar el proc\u00e9s d\u2019elaboraci\u00f3 del producte, l\u2019alumnat ha de dur a terme una \u00faltima tasca creativa: crear una\u00a0<strong>marca pr\u00f2pia de iogurt<\/strong>, dissenyar el logotip i redactar les etiquetes d\u2019informaci\u00f3 al consumidor, donant aix\u00ed per acabat el producte. En el moment en que el iogurt entra a l\u2019estufa de fermentaci\u00f3, l\u2019activitat continua amb el ja habitual desnatat de la llet i l\u2019elaboraci\u00f3 de mantega, treballant aix\u00ed altres vessants del m\u00f3n l\u00e0ctic.<\/p>\n\n\n\n<p>Aquest nou enfocament posa en valor l\u2019aprenentatge vivencial del proc\u00e9s de producci\u00f3 d\u2019un dels grups d\u2019aliments m\u00e9s presents en el nostre dia a dia, fet que ens ajuda a complir l\u2019objectiu d\u2019oferir una connexi\u00f3 de l\u2019alumnat amb la realitat del m\u00f3n alimentari. De cara al curs vinent, us animem a tastar aquesta nova proposta i a seguir explorant amb nosaltres tot el que el m\u00f3n dels aliments ens pot
